Makes about 2 servings.

*1/2 cup of soft whole grain breadcrumbs can be substituted with 1 slice of whole grain bread, crumbled
Directions:
- Preheat oven to 350°F (175°C).
- Mash salmon with liquid and blend well with all other ingredients in a bowl.
- Put into a small, lightly oiled casserole or loaf pan and bake at for 30 to 40 minutes or until top is browned.
- Serve with steamed spinach or frozen vegetables with baked potato, and whole wheat roll.
Variation: Salmon Patties
- Form into four patties.
- Cook in an oiled skillet over medium heat until brown. Turn once during cooking.
- Serve with fresh lemon wedges.
